Nectarine Panna Cotta with French Acacia Honey

Ingrédients
For 6 people:
For the panna cotta:
500ml almond milk
2g agar-agar (approx. 1 tsp)
50g granulated sugar
For the nectarine purée:
500g nectarines (brugnons)
30ml (2 tbsp) French Acacia Honey
1 tsp lemon juice
LA RECETTE
1. Dissolve the agar-agar in a saucepan with 100ml of the almond milk. Bring to a boil while stirring constantly and let simmer for a few seconds. Remove from heat.
2. Off the heat, stir in the remaining almond milk and sugar until fully combined.
3. Drizzle a little French Acacia Honey into the bottom and along the inner sides of 6 verrines (glass cups). Pour in the panna cotta mixture, let cool slightly, then refrigerate for at least 4 hours to set.
4. Meanwhile, prepare the fruit purée: diced nectarines and lemon juice in a saucepan over medium-low heat for about 10 minutes.
5. Remove from heat, stir in the Acacia Honey, and blend until smooth. Allow to cool, then refrigerate.
6. Before serving, spoon the chilled nectarine purée over each set panna cotta. Garnish with fresh nectarine slices and a final drizzle of French Acacia Honey.
