Melopita – Greek Honey Cake

Ingrédients
For the cake:
500g ricotta or mizithra cheese
3 eggs
120g Alsace Flower Honey PGI
1 pinch vanilla powder
Zest of 1 lemon
15g cornstarch
For serving:
Honey
Ground cinnamon
LA RECETTE
1. Preheat the oven to 180°C (350°F).
2. In a mixing bowl, combine all the ingredients until smooth and homogeneous.
3. Line a baking tin with parchment paper and pour in the batter.
4. Bake for 35 minutes; the center should still be slightly jiggly.
5. Let cool completely before unmolding.
6. Serve the melopita with a generous drizzle of honey and a dusting of cinnamon.
