Fig and Orange Blossom Honey Cake

Ingrédients

160g flour
80g almond flour
1 packet baking powder
½ tsp salt
250g ricotta
3 eggs
1 tsp vanilla extract
½ tsp bitter almond extract
100g melted butter
180g Orange Blossom Honey
200g fresh figs
2 tbsp sliced almonds

LA RECETTE

1. Preheat the oven to 175°C (350°F).
2. In a mixing bowl, combine all the dry ingredients.
3. In another bowl, whisk together the ricotta, eggs, vanilla, bitter almond extract, melted butter, and Orange Blossom Honey.
4. Pour the wet mixture into the dry ingredients and gently fold until just combined.
5. Cut most of the figs into quarters (reserve 3-4 whole figs for topping). Fold the quartered figs gently into the batter.
6. Line a cake pan with parchment paper and pour the batter inside.
7. Slice the remaining figs into rounds and arrange them on top of the batter. Sprinkle with the sliced almonds.
8. Bake for 45 to 50 minutes.

✨ Astuce : 

For extra indulgence, drizzle additional honey over the cake as soon as it comes out of the oven.
