Frozen Mini Yogurt Bites with Champagne Honey, Granola, and Berries

Ingrédients

For 12 mini frozen yogurt bites:

For the homemade granola:
180g rolled oats
85g mixed nuts (hazelnuts, almonds, and pecans)
½ tsp ground cinnamon
1 pinch of salt
3 tbsp melted coconut oil
3 tbsp Champagne Honey

For the homemade berry compote:
225g mixed berries (raspberries, blueberries, blackberries, redcurrants)
50g Champagne Honey

For the frozen yogurt:
360g Greek yogurt
60ml milk
3 tbsp Champagne Honey + 50g extra for the honey centers

LA RECETTE

1. Preheat the oven to 175°C (350°F).
2. In a mixing bowl, combine the rolled oats, mixed nuts, cinnamon, and salt. Stir in the melted coconut oil and 3 tbsp Champagne Honey until evenly coated. Spread the mixture onto a baking sheet lined with parchment paper.
3. Bake for 15 to 20 minutes until golden brown, stirring halfway through. Stir again right after removing from the oven, then let cool completely.
4. In a saucepan, combine the mixed berries and 50g Champagne Honey. Bring to a boil, then reduce heat and simmer for 8 to 10 minutes until thickened into a jam-like consistency. Transfer to a glass jar and cool to room temperature.
5. In a bowl, gently whisk the Greek yogurt, milk, and 3 tbsp Champagne Honey until just combined (do not overmix).
6. Assemble in silicone muffin cups: press a layer of granola into the bottom of each cup, then pour the yogurt mixture over top. Drop ½ tsp of pure honey in the center, drizzle a few ribbons of the berry compote, swirl with a toothpick, and top with extra granola.
7. Freeze for at least 3 hours. Remove from the freezer 5 to 10 minutes before serving.
