Halloumi Skewers with Bell Heather Honey

Ingrédients
For 7 skewers:
For the skewers & salad:
7 wooden or metal skewers
1 small zucchini
5 sprigs of flat-leaf parsley
5 sprigs of fresh mint
1 lemon
1 pinch of fleur de sel
1 garlic clove
14 cherry tomatoes
1 small yellow bell pepper
1 block halloumi cheese (250g)
Olive oil
2 tbsp Aquitaine Bell Heather Honey
For the sauce:
2 tbsp amber honey (such as Jura Mountains Honey)
1 tsp fresh grated ginger
1 tbsp peanut butter
2 tbsp sesame oil
1 tbsp lime juice
2 tbsp soy sauce
LA RECETTE
1. Using a vegetable peeler, shave the zucchini lengthwise into ribbon-like strips.
2. Finely chop the parsley and mint.
3. In a bowl, combine the juice of half a lemon, the pressed garlic clove, a pinch of chopped fresh herbs, and a pinch of fleur de sel. Add the zucchini ribbons, toss to coat, and set aside to marinate.
4. Deseed the yellow bell pepper and cut it into bite-sized cubes. Cut the halloumi block into 14 to 15 cubes.
5. Assemble the skewers: thread the ingredients onto the skewers, alternating between halloumi cubes, cherry tomatoes, bell pepper pieces, and folded accordion-style zucchini ribbons.
6. Heat a generous drizzle of olive oil in a skillet over medium-high heat.
7. Once the pan is hot, add the skewers and cook for about 5 minutes per side until the halloumi is nicely browned and crispy.
8. Drizzle with the Aquitaine Bell Heather Honey, remaining fresh herbs, and a squeeze of fresh lemon juice. Serve immediately!
Optional sauce: Whisk together the amber honey, grated ginger, peanut butter, sesame oil, lime juice, and soy sauce until smooth to serve alongside the skewers.
